Pesto Sauce

SAUCES

Two of my favorite sauces are Pesto and Marinara. Both are my fathers recipies and are staples in our house.
Red Sauce

PESTO

Ingredients

  • 2 cups basil leaves
  • 3 cloves of garlic
  • ½ cup pecorino romano cheese
  • ½ cup toasted pine nuts
  • ½ cup extra virgin olive oil
  • ½ teaspoon salt
Pesto Recipe

Instructions

Wash basil in cool water

Shake off water and lay each leaf to dry on paper towels

When basil dries (after an hour or so) throw into food processor

Preheat oven to 350°F

Add however much olive oil (2 tbsp - ½ cup) to the processor and mix until the basil is all chopped

Throw pine nuts into oven on a baking sheet

Watch the nuts for about 10 minutes and make sure they don't burn

After they are lightly toasted throw them with everything else into the processor

Mix for a few minutes until everything's distributed

MARINARA

Ingredients

  • 2 cups crushed tomatoes
  • 2 cloves of garlic
  • 2 tbsp extra virgin olive oil
  • Basil leaves
  • Pinch of salt
  • Pinch of pepper
Red Sauce Recipe

Instructions

Heat up olive oil and garlic in a pan

Throw in your tomatoes and simmer on low heat

Add garlic, salt, pepper, basil, and any herb

Simmer and stir for about 30 minutes till the sauce thickens
